CREAM PUFFS (tested and good!)

Choux Pastry

1 cup water
55g unsalted butter
1/2 tsp salt
120g plain flour
3+ 1 large eggs (beaten lightly)

1) Place water, butter and salt in a heavy saucepan. Bring to boil. When butter is melted, remove from heat and add in the flour at once. Mix rapidly with spatula until combined.
2) Place over low heat and dry mix for 5-6 mins. Dough should be soft, not sticky. Thin, white crust should be observed at the bottom.
3) Transfer to bowl, spread to cool. (I used 5-7 mins.)
4) Add 3 eggs one at a time, stirring each time.
5) Add last egg a little at a time. Mixture should end up like mayo. (thick, shiny, smooth)
6) Preheat oven to 190C. Pipe small balls. (I piped medium sizes, around 5cm in diameter.)
Brush top with leftover egg. Bake for 35 mins. Leave oven door ajar for an hour to cool. (I left it to cool for 45 mins. still ok.)
